Vegan meatballs baked in tomato sauce

Do you remember the recipe for Soybean no-meat balls? I always make more of those and keep them in the freezer. They come in handy when I want something tasty but not necessarily time consuming.
Meatballs taste great with various sauces, as a party snack [ served with dipping sauce ], as a meat substitute in skewers, you can use them in vegan albondigas, serve with pasta or, as in today’s recipe, bake with tomato sauce.

  • 12 meatballs thawed
  • 14 ounce canned tomatoes
  • 1 clove garlic minced or finely grated
  • 1 onion finely chopped
  • ½ carrot finely chopped
  • ½ stalk celery finely chopped
  • 1 tbsp olive oil
  • ½ tsp sweet paprika powder
  • 3 sprigs fresh oregano or ½ tsp dried
  • 3 sprigs fresh thyme or ½ tsp dried
  • ½ cup vegan shredded mozzarella cheese optional
  • salt to taste
  • freshly ground pepper to taste
  • chili flakes optional, to taste


  • Preheat oven to 190°C [ 374F ]
  • Heat up oil in a pot, add finely chopped veggies [ onion, carrot and celery ] and cook until soften
  • Pour canned tomatoes into the pan, add oregano, thyme, paprika, chili flakes and season with salt and pepper
  • Cook for 5 minutes on medium heat
  • Add vegan meatballs, combine with the sauce and transfer into the oven dish
  • Sprinkle with vegan mozzarella [ seen notes below for mozzarella replacement ]
  • Bake for 15 minutes


You can replace the vegan cheese with a bread crumble - add a piece of stale bread to the food processor and mix with 2 tablespoons of olive oil, half clove of garlic and some fresh or dried herbs ]. Sprinkle the crumble over meatballs in tomato sauce and bake as indicated above
