Not sure what’s for dinner? Try this quick and easy flatbread pizza recipe!

I like making pizza from scratch but let’s be honest we all feel lazy sometimes. Making dough takes time and effort. Although, there is an easy shortcut to a quicker and easier pizza using tortillas, pitas or flatbread as a pizza base.
Using a ready-made base will help you to prepare delicious homemade pizzas in no time! It is perfect for a quick lunch or dinner, but also as a party snack.

What will you need to prepare this pizza?

All you need is a cheat pizza base and favorite toppings. In this recipe I used Lebanese flatbreads but pita will also work great for a slightly thicker bottom. You can even use a gluten free version of flat or pita bread.
As for the toppings, you can use the traditional ones like tomato sauce and vegan cheese, add vegan salami or sausages, plant based bacon, mushrooms or favorite vegetables.
I kept it simple, using hummus, summer vegetables, a little olive oil, garlic and aromatic herbs.

  • oven


  • 1 flatbread
  • 2 tbsp hummus
  • ½ red onion sliced thinly
  • 2 cloves garlic chopped or sliced
  • ½ cup zucchini sliced thinly
  • ½ cup eggplant sliced thinly
  • ½ bell pepper sliced
  • few cherry tomatoes whole or sliced in half
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • few sprigs fresh thyme
  • salt to taste
  • cayenne pepper or chili optional or to taste
  • 1 handful arugula to serve, optional


  • Spread flatbread with hummus, place on a baking sheet and set aside
  • Slice zucchini, eggplant, onion and bell pepper thinly. Place in a bowl, add garlic, cherry tomatoes, cayenne pepper, a pint of salt, thyme, oregano and drizzle with olive oil.
    Toss until all the vegetables are coated in oil and seasonings, than arrange on the pizza
  • Bake at 350F for about 15 - 20 minutes
  • Drizzle with good quality extra virgin olive oil before serving and decorate with arugula

How to store leftovers?

This pizza tastes best when served right away, although you can store the leftovers in the refrigerator, covered.
Reheat in an oven preheated to 300F for 5-10 minutes or in a dry frying pan over low flame for a few minutes, until warm.
