I love simple recipes that are easy to make and don’t require anything fancy! Today’s fennel, lemon and white bean galette is the perfect dish for a casual, fancy, or holiday dinner.
Looks complicated? Trust me, it’s not!

You can make your own crust or, to save time, simply use one of many vegan fresh or frozen pastries available on the market right now.

What is galette?
Galette is a French term to describe ‘a flat round cake’ that can be either sweet or savory. Some galette recipes may use puff pastry as base, others a pastry crust.

How to make homemade galette dough?
Preparing a galette dough is super easy! This recipe calls for all-purpose flour but feel free to use whole wheat, buckwheat, or gluten free flour.
Ingredients:
2 cups all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
½ cup hot water
½ cup olive oil
To make a dough:
1. Add flour, baking powder and salt in a bowl and whisk to combine.
2. Follow with olive oil and water.
3. Mix together all the ingredients.
4. Once a uniform dough has formed, transfer it onto a floured surface and knead together for 5 minutes [ keep extra flour nearby in case the surface gets sticky ].
5. Return the dough to the bowl, cover with a towel and set aside for 10 minutes.

Can you prepare this vegan galette using store-bought puff pastry?
Absolutely! In fact, if you’re short on time but still want to serve a freshly baked meal, using a store bought pastry puff or pie crust will definitely cut down on time.

Ingredients

Galette dough

  • 2 cup flour all-purpose or gluten free
  • ½ cup olive oli
  • ½ cup hot water
  • ½ tsp baking powder
  • ¼ tsp salt

Galette filling

  • 5 tbsp vegan cream cheese
  • 1 bulb fennel sliced thinly
  • 1 lemon sliced thinly
  • ½ cup white beans cooked or canned
  • 1 tbsp olive oil + more for serving [ optional ]
  • salt to taste
  • freshly ground pepper to taste

Instructions

To make a dough

  • Add flour, baking powder and salt in a bowl and whisk to combine
  • Follow with olive oil and water
  • Mix together all the ingredients.
    Once a uniform dough has formed, transfer it onto a floured surface and knead together for 5 minutes [ keep extra flour nearby in case the surface gets sticky ]
  • Return the dough to the bowl, cover with a towel and set aside for 10 minutes

Fennel, lemon & white bean galette

  • Slice the bulb of fennel [ leave green, leafy parts for decoration ] and one whole lemon thinly
  • Combine fennel, lemon slices and white beans with a tablespoon of olive oil and season with salt and pepper 
  • Preheat the oven to 350F degrees. Line a baking sheet with parchment paper and set aside
  • Lightly flour the counter or work surface. Roll the dough into a circle. This doesn't have to look perfect. Transfer the dough to a lined baking sheet. You can also roll the dough directly on parchment paper for less clean up
  • Spread vegan cream cheese on the rolled dough, leaving a few inches around the dough to fold on to the veggies 
  • Add fennel - lemon - white bean mixture and spread evenly. Then fold the dough onto the vegetables
  • Bake for 30 - 35 minutes
  • Take galette out of the oven and let it cool for 5 minutes before slicing
  • Drizzle with lemon juice and extra olive oil before serving

How to store, make in advance and reheat fennel, lemon and white bean galette?
  • If you made your galette ahead, you could serve it cold or reheat it. Cover galette with a tin foil and bake at 350F for 15-20 minutes or until warmed all the way through
  • Store leftovers wrapped in plastic wrap or in an airtight container in the refrigerator for 1-2 days
  • This galette can also be stored in the freezer. To freeze, let the galette cool completely before tightly wrapping it in plastic wrap. Store in the freezer for up to 3 months
  • To make in advance, simply prep according to the instructions above. Rather than baking it, tightly wrap the raw galette dough in a plastic wrap and place it in the refrigerator for up to 2 days. When ready to serve, simply defrost the dough and follow the instructions above
