Today’s easy peppers and white bean stew is a typical “fridge cleaning” dish. I must admit that spontaneously cooked meals always taste best to me! Not to mention the satisfaction I get from not throwing anything away!
A while ago I posted an article about the benefits of meal planning, so if you don’t like to waste anything [ including time ] or need to organize yourself better in the kitchen, you will surely find some useful tips in there.

Back to the recipe – stew is super easy to make, gluten, nut and soy free. Keeps well in the fridge and can be frozen.
To season the stew I’ve used cajun spice mix which you’ll easily find at any supermarket or make yourself. I strongly encourage you to prepare or buy one, as it’s very aromatic and can add lots of flavor to many, many dishes.

Easy peppers and white bean stew

Servings 4 servings

Cook Time 30 mins
Total Time 35 mins

Equipment

  • medium cooking pot

Ingredients

  • 2 tbsp olive oil
  • 1 onion sliced thinly
  • 5 peppers - red, yellow and/or orange cut into stripes
  • 2 cloves garlic minced
  • 1 tsp cajun spice mix
  • 14 ounces canned tomatoes
  • 1 cup water
  • salt to taste
  • freshly ground pepper to taste
  • 2 tbsp parsley finely chopped
  • 4 cups cooked rice optional, for serving

Instructions

  • Warm the olive oil in a pot over medium heat
  • Add the onion and cook, stirring from time to time until soft
  • Add garlic, peppers and cajun spice mix and cook for another 5 minutes, stirring often
  • Pour canned tomatoes into the pot, add beans and Kalamata olives
  • Season to taste with salt and pepper, cover with a lid and cook on a medium heat for 15 minutes
  • Serve with cooked rice and chopped parsley

Notes

Refrigerate the stew for up to 4 days or freeze for up to a month.
