Brownie baked oats are super easy to make, a healthy breakfast or snack and so delicious!

This is hands down my absolute favorite breakfast recipe! Dense, moist, and fudgy brownie baked oats are delicious, super easy to make and good for you!
Oats are among the most nutrient-dense foods you can eat. They are a good source of protein and fiber. Fiber not only helps to slow down digestion, it also has a high satiety factor to help keep you full longer.

Easiest brownie recipe ever!

These brownies require one bowl and come together in 5 minutes. I bet you already have the ingredients on hand!
Making this baked oats recipe couldn’t be easier! Here’s a quick rundown of the process, but for full instructions, reference the recipe card at the bottom of the post.
In a bowl combine plant based milk of your choice, oats, cocoa powder, chia seeds, peanut butter, agave syrup and a pinch of salt. Mix well and pour into a baking dish [ I used a regular casserole dish ]. Sprinkle some chocolate chips or chopped chocolate and bake at 350F for 45 minutes.
That’s it!
Try your best to resist eating brownie baked oats straight out of the oven. Letting them cool makes them less likely to crumble when you slice them, plus they’ll get even gooier and fudgier with time. I like them most the next day, straight out of the fridge. Trust me, it’s worth the wait!

Customize your baked oats
One of my favorite things about this recipe is that it’s a very versatile one. Here’s some options for mix-ins and toppings:
Fruits:
Add in a handful any fruit of your liking : blueberries, chopped apples, bananas, diced pears, plums, raspberries, strawberries, peaches, pineapple, figs… Dried fruit works well too!
Spices:
Try adding some cinnamon, apple pie spice, pumpkin pie spice, vanilla extract or ever a pinch of chili
Mix-ins:
Try adding a handful of nuts or shredded coconut – in addition to [ or instead ] of adding fruit
Toppings: Top your baked oats with a drizzle of favorite nut butter or maple syrup, a dollop of ice cream, yogurt or whipped cream.

Ingredients

  • 2 cups plant based milk
  • 2 cups rolled oats
  • ¼ cup cocoa powder
  • ½ cup agave syrup
  • cup peanut butter or other nut butter of your choice
  • 1 tbsp chia seeds
  • 1 tsp baking soda or baking powder
  • 1 pinch salt

Instructions

  • Preheat your oven to 350F.
    If you are using a baking tin, grease it with some coconut oil. There's no need to do that when using a ceramic oven dish.
  • In a bowl combine milk, oats, cocoa powder, chia seeds, baking soda, peanut butter, agave syrup and a pinch of salt.
    Mix well and pour into a baking dish [ I used a regular 9x6 casserole dish but anything close to that will work including, although you might want to slightly alter the baking time depending on your size ].
  • Sprinkle some chocolate chips or chopped chocolate on top and bake for 45 minutes.
