Black bean soup

This healthy black bean soup is smoky, irresistibly satisfying and ready in under 30 minutes!

In this recipe I used canned black beans but you can prepare this soup using dried beans too. It will just take longer to cook.

THIS RECIPE REQUIRES JUST 30 MINUTES AND 3 CANS OF BEANS. HERE’S WHAT YOU’LL NEED:

CANNED BLACK BEANS
TOMATO PASTE
VEGETABLES : yellow onion, carrot, celery stalk and garlic
OLIVE OIL
VEGETABLE BROTH : homemade or store bought
SPICES : smoked paprika, cumin, bay leaf, chili and salt

Ingredients

  • 1 pound black beans canned or cooked
  • cups vegetable broth
  • 2 tbsp olive oil
  • 2 onions finely chopped
  • 1 stalk celery finely chopped
  • ½ carrot finely chopped
  • 3 cloves garlic minced
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • 1 tsp tomato paste
  • 1 bay leaf
  • lime juice to taste
  • fresh cilantro optional
  • vegan sour cream or unsweetened yogurt optional
  • nachos optional

Instructions

  • Heat oil in the pan.
    Add finely diced onion, carrot and celery and sauté until soften and starting to caramelize.
    Add minced garlic, chili, cumin, smoked paprika and cook for about 30 seconds stirring.
  • Pour in the vegetable broth, add tomato paste, beans, bay leaf and bring to a boil.
  • Lower the heat and cook for 20 minutes.
  • Pour half of the soup into a blender and process until smooth, then pour back into the pot.
  • Ladle the soup into the bowls and serve with a tablespoon of sour cream or yogurt, fresh cilantro, lime wedges and nachos for a little crunch.

Leftovers storage

This black bean soup stores very well. Save it for up to 5 days refrigerated. The flavor just gets better over time!
