Apricot salsa

This delicious, sweet-sour-spicy apricot salsa is a great addition to all meat substitutes – sausages, burgers, no-meat balls … You can also spread it on wraps, toasts or use as a nacho dip.

Apricot salsa is very easy to make! All you need to do is to dice the ingredients, transfer into a bowl and combine with olive oil, chili, lime juice and lots of cilantro, which adds a great flavor, but if you are not a fan, parsley and a bit of mint will also work great!
Salsa can be served right away or kept refrigerated for up to two days.

What do you need to prepare apricot salsa?

Salsa requires only 3 basic ingredients and some taste makers:
apricots
bell pepper
onion
fresh or dried chili
lime or lemon juice
fresh cilantro or parsley
olive oil
maple or agave syrup
salt and freshly ground pepper

How to prepare apricot salsa?

1. Dice the apricots, bell pepper and onion into small cubes.
2. Transfer to a bowl. Add chopped cilantro [ use parsley if you are not a cilantro fan ], finely chopped chili, olive oil and agave/maple syrup.
3. Season to taste with lime juice, salt, pepper and finely chopped chili toss to combine. You should look for a nice balance between sweet, salty, sour and spicy.

  • 10 apricots diced
  • 1 bell pepper diced
  • 1 red onion diced
  • 1 tbsp extra virgin olive oil
  • lime juice to taste
  • 1 tsp agave or maple syrup
  • salt to taste
  • freshly ground pepper to taste
  • fresh or dried chili to taste
  • 1 handful cilantro or parsley chopped

Instructions
